Apple Empanadas!!

 {Homemade Apple Empanadas}

These cinnamony, apple treats are so delicious you'll want more! And kids will LOVE them!
What you need:

  •  6 apples
  • 1 cup cinnamon
  • 2 cups sugar
  • 1/2 cup flour
  • 12 tortillas(large or small, I show large)
  • 1 tbsp butter
  • 1/2 tsp vanilla
  • a pinch of apple pie spice
  • 1/4 cup water
  • toothpicks
  • oil

  • Reserve 3/4 c of cinnamon and 1 1/2 cups of sugar in a large bowl.
    Dice your apples and bring them to a boil.

    After boiling, toss them in a large bowl. Mix in 1/4 c cinnamon, 1/2 c sugar, 1/2 c flour, 1 tbsp butter, 1/2 tsp vanilla, a pinch of apple pie spice and 1/4 cup of water with the apples and stir until the apples are well-coated.

    Get your tortilla laid out and spoon some apples onto it.

    Next, fold one side in...

    Annnd then the other...

    Bring the bottom of the tortilla up and fold it in...

    Roll it into a "burrito..." Careful not to puncture it!

    Pin it with a toothpick...

    Make sure you oil is nice and hot...

    Gently place the empanada in the oil...

    When they're this big there's typically 3 sides to them. You want them to reach a nice golden brown on each side...That's usually about 45 seconds on each side, give or take a few...

    They really shouldn't take more than 3 minutes to cook...

    Have your bowl of reserved cinnamon and sugar ready to go and by your frying pan...

    Place your empanadas in the mix as you make them so that it will stick. Roll them so that they are coated in cinnamon and sugar. MMM!

    And VOILA! You have a empanada!

    12 to be exact :)

    Serve them a la mode and prepare to be in heaven!! This is a dessert you will fall in love with! Enjoy!
