The Way My Momma Fries a Pork Chop!

My favorite meal growing up was my moms fried pork chops, mashed potatoes(with brown gravy) and mac and cheese! We were health nuts. Only the best for us! That meal is still my favorite and would be my last, dying request. I won Kory over with these when we first started dating. He was thoroughly impressed. :) I wanted to share part of my mom's goodness with you. I hope you enjoy these chops as much as I did/do!

I like a nice thick chop, none of those pancake chops. Since I prefer a nice thick one and I'm one for penny pinching, I'll buy a whole pork loin and cut it myself. It's cheaper that way and you get a lot more out of it. You could easily get 15-20 thick chops out of one loin. Then you can bag some chops separately and freeze them for another time.

What you need:
1 pork  loin
4 cups flour
about 3 tbsp garlic
about pinch of salt
about pinch of pepper

First you'll slice your chops. I like mine to be about an inch to an inch and a half thick. Next you'll get your eggs and beat them. I show 13 eggs, but that's because I made about 10 pork chops. For a family of 4 you'd only need 4 or 5 eggs. Then I combine my flour, salt, pepper and garlic. Mix them together well. Taste your mix to make sure it has good flavor, the amounts you put in are really personal preference. I always put a ton of garlic and pepper in my food.

Next you'll dredge your chops in the eggs and then your batter.
They'll look something like this. Gloves are great for this process, if not you'll have a sticky batter-y mess on your hands...literally. :)

You're ready to fry them now. They usually take about 13-15 minutes, so about 7 minutes on each side.
Voila! They're ready to be devoured, by your new man, best friend, in laws, whomever!
