{Sweet Summer Salad}

This summer salad is heavenly. Change your world, heavenly. It makes me enjoy things that I've never enjoyed before, such as tomatoes and nectarines. The ingredients in this salad bring out the best in one another. The ever so catchy part is that it's also quick and easy. I would definitely consider this a side salad or an appetizer, you'll still need some meat afterwards. :) 

What you need:
2 tomatoes
2 nectarines
baby arugula
olive oil
balsamic vinaigrette 
2 balls of fresh mozzarella

First you'll quarter your tomatoes and nectarines. Then toss them in a couple tablespoons of olive oil and vinaigrette.
Then you'll grill those little babes!
You want them to get a nice char on each side.
Afterwards, toss them in a bowl and add in 2-3 cups of arugula.
This is what your fresh mozzarella will look like. You can easily tear it into pieces. I tore mine into quarter size pieces and tossed it in the bowl. Add another round of oil and viniagrette(about 2 tbsp each). Then give it a little toss.

And you've made a salad that's absolutely divine and full of flavor.
I learned this from our good friend Alex, the chef at Bella Napoli. He's amazing and so is the restaurant. I'm surprised I haven't blogged about the restaurant before, I'll have to get on that for you guys!
