PUMPKIN ROLL

Thanksgiving is just around the corner and I promised you all a pumpkin roll recipe so here it is!

What you need:

For the cake:
3 eggs
3/4 cup flour
1 cup sugar
1 tsp baking soda
2/3 cup pumpkin
2 tsp cinnamon
1/2 tsp salt

For the filling:
1 cup powdered sugar
1 pkg cream cheese
1/2 tsp vanilla
4 tbsp butter

Directions:
First spray you pan with PAM. Make sure you spray it well and evenly, you want the cake to come out easily. Next beat 3 eggs on high for 5 minutes. Gradually beat in 1 cup sugar. Stir in pumpkin. In a separate bowl mix flour, baking soda, cinnamon and salt. Fold your dry mix into your pumpkin mix. Thens spread your cake over your greased 15x10 jelly roll pan. Bake at 375 for 15 minutes. When done, let cake cool for 5 minutes then turn it out onto a towel. Starting at narrow end, roll the cake and towel together. Let it cool for about an hour. While it's cooling you can make your filling. Combine your powdered sugar, cream cheese, butter and vanilla and beat smoothly. Spread your filling over your cool, unrolled cake. Roll it again, cover and chill! Slice your log and serve!
