{Homemade Baked Potato Soup}

Here in Missouri, we've been locked indoors thanks to a severe winter storm. If I sound bitter, it's because I am. I've never been a huge fan of winter and it seems as though my hate for it has steadily increased over time. I just appreciate the outdoors and a cool spring breeze. I like the sun to shine so that I can wear a different pair of sunglasses every day. BUT since I was stuck indoors all day yesterday(yes, we even closed down the restaurant. In fact, numerous businesses closed all over town.) I thought I'd make the most of it. With food of course! Are you surprised? Frozen pizza, brownies and drumroll....HOMEMADE BAKED POTATO SOUP! I couldn't make something so delish and not share it with you, especially since some of you might be cooped up again today.


So here's what you need:
Skillet
Crock pot
5 large baking potatoes
1 cup water
Lots of milk(7 cups)
1 1/2 sticks of butter
1/3 cup flour
1 cup sour cream
Green onions 1/4 cup plus a few for garnish
1 small yellow onion
Garlic powder, salt and pepper to taste-you could almost skip the salt with everything else that's in there!
Bacon(if you're crazy like us, then 2 packages) but in all seriousness let's just say 2 cups, some for the soup and a sprinkle for garnish.
Chicken base(1/4 cup), bouillon or broth(I prefer base)

  1. First wrap your potatoes and bake them for 30-45 minutes at 350-375
  2. With the crock pot still turned off, add in milk, sour cream, chicken base, water, green onions, salt, pepper, garlic and the bacon.
  3. Chop 1/2 cup of yellow onion
  4. In a skillet melt your butter and cook the onions in it until they're translucent. Mix in your flour and stir until flour is dissolved. 
  5. Add your flour mixture to the crock pot.
  6. Dice your baked potatoes and add them to the crock pot
  7. Turn the crock pot to high and let cook for 30 min.
This was seriously so good. If you're going to be stuck in a snow storm, you should at least have something delicious to eat right?
