The bits and pieces of warm weather that we have been getting have me in a frenzy. I have been locked inside with my new baby for four months. We have been sure to take full advantage of every warm day we've had. It's been a bit of a tease, but we know it's just around the corner. The birds are chirping and the sun in staying out longer. For us, warm weather brings fresh, light food. We love to grill and pick out the season's best veggies! I've really wanted to start thinking about shedding this baby weight (more on that in a post coming soon.), so fresh is definitely the way to go. With all of this in mind, I thought I'd share this yummy tortellini salad with you.
What you need:
Cook the tortellini according to the directions. Chop your asparagus? Onions, mozzarella balls and pepperoni. Toss them in a large bowl. Drain and cool-rinse your tortellini, then toss them in your bowl as well. Salt and pepper to taste. Drizzle with olive oil and balsamic vinegar and toss! That's it. Some might say cheese tortellini AND fresh mozzarella pizza is too heavy, but of you're going to contain about too much cheese then we probably shouldn't be friends. Except my lactose intolerant friends...I'm so sorry!! You can totally do any veggies. Tomatoes would be traditional, but Kory and I hate tomatoes. It's a sin, I know, but that's how we roll. Black olives would be a nice touch. It can really be anything that you enjoy! The world is your oyster! :)
